Penne a la Vodka (five ingredients)

🍝Penne a la Vodka (Five ingredient sauce). 🍝This is the pasta I make for my family at least once a week. 🍝Actually, I make it in a big batch and then freeze the sauce in ziplock containers. 🍝This recipe is from Gino’s Pizzeria in Elmont where I worked as a waitress for about seven years. 🍝I thought I’d share since lots of people are at home doing lots of cooking. 🍝

🍝Ingredients:🍝

8 oz of cubed proscuitto

2 bunches of scallions

1 c.-1 1/2 c of Vodka

2 28-oz cans of crushed tomatoes or tomato sauce

Quart of heavy whipping cream

Pasta of your choice  (We use penne or rigatoni.)

Grated cheese (We use Pecorino Romano, Locatelli brand)

🍝As you can see from the picture, this meal can be done pretty inexpensively. 🍝I got these ingredients at Kroger or Walmart. 🍝If you want to throw away money, feel free to go to Central Market or Whole Foods as they will gladly charge you so much more for canned tomatoes. 🍝As for the vodka, don’t be a cheap ass and use Grey Goose. 🍝

🍝Just kidding. 🍝I use Tito’s but you can go lower in brand than that. It’s not a martini. 🍝

🍝Procedure:🍝

  1. Heat olive oil  in large sauce pot and cook prosciutto until crispy.
  2. Add scallions, cook for 1-2 minutes until soft. 
  3. Add vodka and stir everything in the pan to get the prosciutto bits. Let that cook for a few minutes to burn off the alcohol. 
  4. Add tomato sauce. Add some salt and pepper to taste. I don’t have an exact amount. Just remember that the prosciutto is salty already.
  5. Once boiling, turn down the heat to simmer and let the sauce go for at least 30 minutes. Boil water for pasta.
  6. Add heavy cream and cook for about 5-10 more minutes.  Add pasta to boiling water and cook according to directions on the box.
